The chef takes full advantage of nature's abundant harvest from nearby sea, lochs, rivers and the rich farmland and manages to combine simplicity with sophistication, to ensure that you enjoy the very best of Highland cuisine. In days of old, only the Laird or the Chief of the Clan could enjoy a relaxing stay in a Scottish highland castle. Nowadays, times have changed.
